Oh, they give you a bunch of new colors that you couldn't get with
just an amp, and are a lot cheaper than owning 10 amps!
Also, too many amps are designed with current-starved power
supplies to ge that "sag" that some folks like. I hate it. I like the
robust tone and clarity that come from a solid power supply and
if I want sag, I use a dang compressor. Sooo, the sound of a really
solid amp with a great pedal into it is different than an amp that is
running out of current. Quite a bit different.

For me personally, I prefer amp distortion - I have a Sovtek
50W Tube head that, combined with a 2x12 Celestion cab, gives
me a tone I like; but for recording other people, I also have a
Line6 Spider II amp & a Line6 Tone Core distortion pedal...
those things along with a choice of guitars allows you a wider
range of options in order to get complimentary tones on
anything from basic tracks to overdubs (ESPECIALLY when you're
doing doubled parts & such). A musician might have a rig that's
either crap, or that might even be good gear and gives them a
great "live" sound, but not so much for recording purposes...
so, things like pedals & modeling amps & a few guitars with
everything from Fender single-coils to humbuckers to P90's can
give you a wider range to offer.
On the last project I did, the two guitar players used ONLY my
guitars, one of their amps, my Line6 amp & my Sovtek amp for
various parts. On the one I'm currently working on, the main
guitarist so far has used one of his guitars & three of mine,
the other guitarist hasn't used his guitar at all, but has
used two of mine... amps on this one have been a combination
of the main guitarists Mesa triple rectumfryer & my Line6;
No pedals so far :)
